The Bikini Cocktail

Yields 10 people

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Citrus Syrup: Place all the components in a pot, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the stove and leave to cool completely. Transfer to a sterilised bottle, seal and store in the fridge, it can be stored for around one month.

Preparing the Batch Mix: Combine the specified spirits and syrup in a large bottle, leave to sit for an hour, then filter it , ideally through muslin, making it perfectly clear.

For serving: Add 85ml from the batch mix into a cocktail shaker packed with ice, and agitate lightly for about 60 seconds to cool it down. Filter to a frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it by giving it a quick spritz of mandarin oil over the top.
